Zucchini Chips

Oh my gosh! Who doesn’t love zucchini? These chips bring out all the sweet and savory goodness of any zucchini–add a delightful crunch and you have a NOM NOM good snack! #SoNomNom4u #zucchinichips #vegetarian

Zucchini Chips

3 large zucchinis

Peanut oil in a deep fryer (or in a large pot, filled 1/3 of the way)

Salt to taste

Paper Towels for draining

Preheat oil to 375°F

Using a Mandoline or a sharp knife, slice all zucchinis into very thin slices (about1/8″ thick).

In small batches, add zuccini slices to the preheated oil Oil should be around 375°F. Do not put too many slices in the oil at a time. The more space they have, the less time it takes and the crispier they get.

Fry each batch until they begin to turn brown/ Remove from oil and let drain on paper towels. Repeat with each batch until all your zucchini are fried crispy. Sprinkle with salt. Serve.
