HayStack Fiesta

Updated: Sep 8, 2020

Remember having Haystacks at school when you were a kid, or is it just me? Who didn’t love haystack day! #SoNomNom4u

Haystacks:

1 family size bag of Original Fritos®

Shredded Lettuce (Leaf lettuce is shown but you can also use iceberg)

1 Large Block of Cabot Seriously Sharp White Cheddar, FINELY shredded (or any finely shredded cheddar!)

1 packet of Old El Paso® Taco Seasoning (Or instead make your own–see below)

2 lb ground beef

1 can of chili beans, pureed (I put a can in blender or food processor)

TACO SEASON if you don’t use a packet:

2 TBSP Cumin

2 tsp Salt

2 TBSP Chili Powder

2 tsp garlic powder

2 tsp onion powder

TO MAKE THE MEAT:

In a large skillet, cook ground beef until it is brown and crumbly, drain grease.

Put Ground beef back in skillet and add taco seasoning packet and pureed chili. Stir and cook until heated. Remove from heat.

TO ASSEMBLE:

Make individual plates for each person.

Place a handful of Fritos® on a plate. Top fritos with meat. Top meat with lettuce, and top lettuce with cheese. Repeat process for each person’s plate. Serve and enjoy!
