Chicken Romano Penne Pasta

This is a go to meal when cooking time is limited! If you don’t know what you are having for dinner and you waited too long to figure it out and your chicken is frozen, this meal is perfect! Pop that chicken in the microwave to thaw it and get that water boiling in the pot for the pasta! Dinner will be ready very quickly! #ChickenRomanoPennePasta #sonomnom4u

2 boneless, skinless chicken breasts, grilled and chopped

6 TBSP olive oil (+2 TBSP to coat pasta)

2 TBSP Pesto Sauce

3 cloves garlic, minced

3/4 cup chicken broth

juice of half a lemon

1 TBSP Basil

1 TBSP Oregano

1 TBSP Parsley

1 tsp. Thyme

1/4 cup freshly grated romano cheese

Boil the pasta as per directions on the box. Usually, Penne is about 12 minutes.

drain, toss with 2 TBSP olive oil. Set aside.

In a skillet, heat olive oil, pesto and garlic. Cook for 1 minute. Add Chicken broth, and lemon juice. Add chopped, grilled chicken. Pour mixture over drained pasta. Add Freshly grated cheese, Basil, Oregano, Parsley, and Thyme. Toss to even coat pasta.

Serve hot with some type of bread.
