Aaron’s Light Stew

This stew is simple and easy and very good for you! Unlike all those other stews, this one doesn’t sit in flour-based gravy. The sauce is a light, delicious, and tomato-based. Try it today! You can throw it all in the crockpot or divide the tasks out as Aaron does. Up to you–either way it is so nom nom! #lightstew #stew #steakStew #sonomnom4u #goodeats

Ingredients

2 lb beef (any cut works!)

16 oz. baby carrots

1 onion, finely chopped

3 stalks of celery, finely chopped

1 can tomato paste

3 cans of water (refill tomato paste can with water x3)

6 potatoes

salt & pepper to taste

All in one method:

In a large crockpot, add tomato paste and water and stir until blended. Add all other ingredients and place lid on crockpot. Leave on low or auto for about 6 hours.

Layered time method:

In a large crockpot, add chopped onion, meat and celery. Cook on high heat about 10 minutes. Add Carrots and place lid on crockpot. Cook 2 hours. Add potatoes after 2 hours is up and place lid on and cook for another 3-4 hours on low or auto.

Serve hot. Sprinkle with salt and pepper. Goes great with warm, buttered Hawaiian rolls and salad!
