Kolaches

Oh, how fun! There are endless filling options for these, and every one of them turns out delicious. They do take a little time to prepare, but they freeze, refrigerate, and reheat beautifully. They’re perfect to make ahead for quick lunches or meals on the go. I developed this dough recipe myself after testing and tweaking several others. Finding the ideal texture can be tricky, but rest assured, I nailed it.

Kolache Dough:

1-1/2 cups heavy cream, warmed to about 100°F

2 (.25 oz) packs of yeast

1/3 cup sugar

4 cups bread flour

dash of salt

2 TBSP olive oil

1 stick of melted butter +2 TBSP

In a stand-alone mixer, add warmed cream and sugar. Sprinkle both yeast packet contents across the top of the liquid. Let it stand for about 5 minutes. When the yeast mixture is a bit foamy, turn the mixer on low and scoop 1 cup of flour at a time, adding it gently. After 2 cups of flour are mixed in, pour in melted butter and salt. After the melted butter is poured and mixed, add the remaining 2 cups of flour. When this forms into a dough, rub or spray the top and bottom of the dough ball with olive oil and place back in bowl. Cover and let rise 1 hour.

After 1 hour, remove the dough and place it on a lightly floured surface. break dough in half and half again. Repeat with each chunk until you have 16 pieces (each weighing approximately 4 oz)

If you do not want 16 kolaches right now, place the extras on a pan and place the pan in the freezer. After they are frozen, throw them together in a zipper bag and save for when you want to make more. Or make them all now and freeze after they are baked! They heat great in the toaster oven or oven!

Preheat oven to 375°F

Kolache fillings can be anything you want!

You will take each portion of dough and roll it into about 4″ circle. Place some well-drained filling in the center of the circle, gather all ends together like a pouch, seal and flip upside down (ball side up, seam side down) onto a parchment-lined baking sheet. Repeat until you have all of the fillings inside all the kolaches you wish to make.

Brush the top of each kolache with melted butter. Bake in a 375°F oven for approximately 20-25 minutes (until they are golden) Remove from oven and serve hot.

Filling ideas:

Pizza (sauce, meats, cheese)

Buffalo chicken (Fried chicken strips, coated in buffalo sauce and chopped)

Steak (shaved steak or Steak Umms)

Scrambled egg (with other fillings like peppers, sausage and cheese)

Sausage gravy (made super thick so it won’t leak (decrease liquid or increase flour)

Hot ham and cheese (Chopped ham and choice of cheese)

Meatball/sauce (sliced meatballs, mozzarella cheese & red sauce)
